Step Aside Pumpkin Spice – Meet the Lavender Latte

We’re not trying to make any enemies here, but when it comes to coffee, there’s one fall ingredient that leaves pumpkin spice in its dust – gmo-free lavender honey. That’s right, PSLs have some competition! This past summer and fall, the bees on our lavender farm were busy making sweet, rich, gmo-free lavender honey perfect for spooning into warm coffee and teas. Whether you’re familiar with culinary lavender or are new to this floral flavor, lavender honey is a perfectly sweet companion that will shake up your next coffee run.

Our gmo-free lavender honey is delicately flavored with the taste of lavender. It is a mono-floral variety, meaning that the bees which make the honey take pollen exclusively from our lavender plants. There are few lavender fields in the United States, making our lavender honey a rare indulgence for honey lovers. Honey is a great alternative to artificial sweeteners or processed sugars and provides a much richer sip. It’s a great way to ease into the taste of lavender or win your friends over to the purple side. 

We put together some recipes below that use our mono-floral gmo-free lavender honey and are perfect for at-home baristas or anyone looking to elevate their coffee game.

Lavender Honey Latte

GMO-free lavender honey helps tone down the bitterness of espresso

This lavender latte is easy to whip up at home without any fancy gadgets or barista experience! The sweet and delicate taste of our Lavender Honey helps to tone down the bitterness of espresso. Try to pick a blend that’s smooth rather than bold to create a more harmonious lavender latte. You can serve it hot or pour over ice, whichever way you like!

Ingredients:

  • 2 shots of the espresso of your choice
    • Bonus points if it’s from a local shop or fair trade qualified!
  • 1 cup of milk
    • Plant-based milk options work well here!
  • 1 tbsp heavy whipping cream
    • Optional
  • 1 tbsp Lavender Honey (or to taste)

Instructions:

  • Pour two shots of espresso into a glass. 
  • Add milk and lavender honey and stir.
  • In a separate container, use the whipping cream to make a milk froth either by shaking it vigorously in a container to aerate it, or by using a milk frother.
  • Pour the frothed milk on top et voilà! Give it a taste and add more Lavender Honey as needed.

Lavender Vanilla Iced Coffee

Vanilla extract rounds out the floral taste of the latte

This recipe is very similar to the above lavender latte but uses drip coffee in place of espresso for a milder, smoother drink. Vanilla extract adds an extra layer of indulgence to this drink and helps to round out the floral taste of lavender. You can also swap out the vanilla for a white chocolate coffee liqueur for more sweetness and fall flavor!

Ingredients:

  • 1 cup of dark roast coffee
    • You can also swap for 2 shots of espresso instead or add an espresso shot to your drink for an extra caffeine boost!
  • A splash of milk or to taste
  • ¼ tsp vanilla extract
    • Or white chocolate liqueur to taste
  • 1 tbsp Lavender Honey

Instructions:

  • Brew coffee and pour over ice
  • Add milk, vanilla, and lavender honey and stir

Lavender Matcha Latte

A matcha latte could be a good alternative for non-coffee drinkers

If you’re not much of a coffee drinker, this matcha latte is packed with antioxidants and has a creamy, rich texture that you’ll love. Matcha differs from most green teas because you consume the entire powdered tea leaf rather than just drinking water infused by the leaves. This results in a much richer blend that’s better for you and provides a sustained, steady form of caffeine for you for hours! You can go the traditional Japanese tea ceremony method to prepare your matcha if you choose, but since we’re already going a bit non-traditional, this quick recipe will do just fine! It’s perfect all year long in your favorite mug or over ice!

Ingredients:

  • ½ cup hot (but not boiling) water
  • ½ tsp matcha powder
    • You can find it online or in many grocery stores. Just make sure to get the loose powder, not bagged matcha
  • 1 cup milk (any kind will do)
  • 1 tbsp Lavender Honey (or to taste)
  • ¼ tsp vanilla extract

Instructions:

  • Add your matcha powder to hot water and stir.
    • A quick note – matcha is best served with near boiling water, at around 175OF to avoid scorching the tea. Cooler water also works to bring out its umami flavor.
  • After a minute or two, add the remaining ingredients.
  • Whisk by hand or in a blender until bubbles begin to form and you reach your desired frothiness.
  • Taste and add more honey or vanilla to taste.

Pumpkin spice has its place in the fall lineup and the backed up lines at Starbucks, but lavender honey is a perfect way to elevate your coffee game while at home, especially when it’s gmo-free. It’s great in warm drinks as it rounds out the bitter taste of coffee and gives off the lovely, soothing aroma of summer lavender fields. No matter your preference, from flat white to near-black coffee, lavender is the perfect pairing!
