Sourwood Honey
The Gold Standard of Appalachian Varietals.
While we work to rebuild our local apiary here in Boone County, we’ve gone straight to the source to bring you the finest varietals the mountains have to offer. This Sourwood Honey is harvested by master beekeepers in the rugged heart of the Monongahela National Forest region in West Virginia. Widely considered the holy grail of honey by purists, it is globally celebrated for its complex depth and exceptional purity.
Why It Commands a Premium:
-
The Highland Terroir: The high altitude, clean mountain air, and dense wild Sourwood groves of the High Allegheny region yield a pristine nectar that is notoriously difficult to harvest.
-
The Multi-Layered Flavor: Despite the name, Sourwood isn’t sour. It features a luxurious, buttery, caramel-like sweetness with a distinctive, sophisticated finish of warm spice, cinnamon, and clove.
-
Flawless Liquid Clarity: Naturally highly resistant to crystallization, this prized honey maintains a smooth, liquid texture and a deep, radiant amber glow far longer than standard varietals.
Gastronomic Pairings:
-
Provisions: Magnificent on a warm, buttered Appalachian buttermilk biscuit where the heat releases the caramel aroma.
-
Mixology: Stir into an Old Fashioned or a premium dark bourbon cocktail to complement the oak and spice notes.
-
The Purist Method: Complex enough to be enjoyed completely on its own, straight from the artisanal spoon.
Culinary Notes & Care:
Raw, unpasteurized honey retains all its natural enzymes. If crystallization does eventually occur, simply place the jar in a warm water bath to gently restore its liquid amber state.
Caution: Do not feed honey to infants under one year of age.
Clean Ingredients:
Pure, Raw, Single-Origin Sourwood Honey.
