Basswood Honey
A Highland Summer Treasure.
While we work to rebuild our local apiary here in Boone County, we’ve gone straight to the source to bring you the finest varietals the mountains have to offer. This Basswood Honey is harvested by master beekeepers in Tucker County, West Virginia, deep within the High Allegheny region of the Appalachian Highlands. Prized by connoisseurs, it features a shimmering, pale amber hue and a celebrated, refreshing finish.
Why It Commands a Premium:
-
The Rare Linden Bloom: Hand-harvested during a remarkably narrow mid-summer window when the wild Basswood (Linden) trees peak in the high altitudes.
-
The "Cooling" Flavor Profile: Unlike heavy, musky commercial honeys, Basswood begins with a crisp, herbal sweetness and finishes with a sophisticated, clean hint of spearmint and lime.
-
Artisanal Purity: Raw, unpasteurized, and deeply reflective of the rugged Allegheny terroir.
Gastronomic Pairings:
-
Beverages: The ultimate companion for delicate green teas or white teas where its minty notes can shine.
-
Cheeses: Drizzle over fresh, tangy goat cheese or sharp ricotta.
-
Provisions: Perfect over seasonal berries, stone fruits, or warm biscuits to highlight its bright citrusy undertones.
Culinary Notes & Care:
All raw, unfiltered honey will naturally crystallize over time, which preserves its enzymes and nutrients. To gently re-liquify, place the jar in a warm water bath.
Caution: Do not feed honey to infants under one year of age.
