Goldenrod Honey
The Bold Spirit of the Autumn Harvest.
While we work to rebuild our local apiary here in Boone County, we’ve gone straight to the source to bring you the finest varietals the mountains have to offer. This Goldenrod Honey is harvested by master beekeepers in Tucker County, West Virginia, deep within the High Allegheny region of the Appalachian Highlands. A sturdy, deep-amber honey, it beautifully captures the rugged soul of late-season mountain wildflowers.
Why It Commands a Premium:
-
The Savory Earthy Depth: Unlike delicate, sugary spring honeys, Goldenrod delivers a complex, full-bodied flavor profile with distinct notes of clean beeswax, warm molasses, and wild autumn spice.
-
The Artisanal Wellness Choice: Highly prized by highland locals, this late-season harvest is exceptionally rich in wild regional pollens, offering authentic, traditional mountain character you can taste.
-
Robust Integrity: Raw, unfiltered, and unapologetically bold—engineered by nature to stand up to heat and heavy culinary pairings.
Gastronomic Pairings:
-
Cheeses: Incredible when drizzled over extra-sharp white cheddar, aged gouda, or blue cheeses where its savory depth can counter the salt.
-
Provisions: Use as a premium glaze for roasted root vegetables, winter squashes, or dark rye breads.
-
Beverages: The perfect choice for stirring into robust, bold black teas (like English Breakfast or Earl Grey) or hot apple ciders.
Culinary Notes & Care:
Because of its high natural pollen content, raw Goldenrod honey will naturally crystallize quicker than other varietals. This is proof of its raw, unpasteurized state. To return it to a liquid flow, simply place the jar in a warm water bath.
Caution: Do not feed honey to infants under one year of age.
Clean Ingredients:
Pure, Raw, Single-Origin Goldenrod Honey.
